Job Description:
We are a busy Vietnamese restaurant seeking an experienced Roast Meat Chef to join our kitchen team. The role focuses on preparing authentic Chinese-style roast meats, including char siu, roast duck, and crispy roast pork, to complement our diverse Vietnamese menu.
The role will include, but not limited to:

Select, prepare, marinate, and season pork and duck in accordance with traditional Chinese roast meat recipes and standards.

Operate commercial ovens and specialized roasting equipment to produce char siu, roast duck, and crispy roast pork.

Control roasting temperatures and timing to achieve the desired texture, crispiness, and flavor.

Apply sauces, glazes, or basting during roasting to ensure the right color, taste, and presentation.

Slice, portion, and plate roasted meats as required, ensuring consistency and stable quality of all dishes.

Store raw and cooked meats properly in compliance with food safety standards to maintain hygiene and safety.

Keep the roast meat preparation area clean, including ovens, chopping boards, knives, and related utensils.

Work collaboratively with other chefs to ensure timely preparation and delivery of menu items.

Monitor the use of key ingredients (pork, duck, seasonings, sauces) and promptly report procurement needs to the head chef or kitchen manager.

Prepare roast meats or adjust cooking methods based on customer preferences or special requests where appropriate.

Job pre-requisites:

At least 2 years’ cookery working experience

Relevant cookery qualification or certificate is preferable but not a must

Excellent communication skills

Attention to details and a hard-working attitude.
