We are looking for an experienced Dough Maker to join our Asian food manufacturing business.

You will be working together with the production team to produce a number of different Asian noodles and pastry products.

Your responsibilities include:

  • Understand the characteristics of raw ingredients (especially flour) and the effects of climate and seasonal changes
  • Modify recipes to adapt to changes in raw ingredients
  • Bring new ideas, innovation and product development to the business
  • Mentor and train junior staff
  • Monitor and manage raw materials
  • Convert raw materials into dough with a kneader / mixer
  • Assess dough temperature, moisture and texture
  • Shape and cut dough into noodle strips or pastry products
  • Monitor cooking temperatures of cookers, ovens and steamers
  • Ensure processes and finished products confirm to product specifications and comply with relevant food safety standards
  • Operate, check and clean manufacturing equipment and utensils 

The successful applicant will have:

  • A minimum of 2 years experience in the preparation of Asian noodles and other relevant dough-based products.  
  • A good understanding of GMP (Good Manufacturing Practices), HACCP and Food Safety / Control Plans would be an advantage
  • Be a team player with excellent time management skills
  • Be a reliable and honest team player with great time management skills  
  • High standards of hygiene and reasonable level of physical ability
    Fluent in spoken Cantonese or Mandarin is preferable, but not essential

This is a Monday to Friday full-time (40 hours per week) position with an early start with some weekend work that may be required.

Rates of pay: $28 - $30 per hour depending on experience
