Full-Time Sole-Charge Pastrycook – Bakery Café in Napier, Hawke’s Bay

Job Description
We are a family-owned bakery café located in Napier, Hawke’s Bay, currently seeking a dedicated and experienced Full-Time Sole-Charge Pastrycook to join our team. This is an excellent opportunity for a skilled Pastrycook/baker to showcase their talent in a supportive and fast-paced environment.

About the Role
We are looking for someone with at least two years of baking experience or a relevant Level 4 qualification. The successful applicant will be confident working independently, as this is a sole-charge position. You must be proficient in preparing a wide range of baked goods including pies, pastries, bread, cakes, and desserts, as well as making your own pastry and fillings from scratch without supervision.

Work Hours
Our bakery café operates seven days a week, with rostered shifts scheduled between 3:00 am and 3:00 pm, Monday to Sunday. The position offers a minimum of 30 hours and up to 40 hours per week, depending on the roster.

Hourly Rate
Pay is $25.00 to $35.00 per hour, depending on your skills and experience.

Key Responsibilities

  • Prepare and measure all raw materials with precision, ensuring the quality and accuracy of ingredients in accordance with product specifications.
  • Clean and inspect all baking equipment, tools, and the work premises before production begins, ensuring strict compliance with occupational health and safety standards.
  • Mix, knead, mould, cut, and shape dough and pastry products to produce a variety of baked goods.
  • Create pastry fillings and manage the full pastry production process independently, from preparation through to finishing.
  • Monitor oven temperatures accurately and bake products in scheduled batches, ensuring correct baking times and consistent quality.
  • Glaze pastries and decorate cakes with cream, icing, and other decorative elements to meet presentation standards.
  • Operate bakery machinery such as dough rollers, moulders, and biscuit cutters efficiently and safely.
  • Open the bakery café when rostered, ensuring all preparation tasks are completed before service begins.
  • Follow all food safety practices and consistently maintain a clean and hygienic work environment throughout the day.
  • Clean baking equipment, grease trays, and ensure all tools are thoroughly cleaned and properly stored at the end of each shift.
  • Wash and sanitise kitchen areas, including benches, sinks, and storage areas; clean coffee machine, cold room, floors, and shop windows daily.
  • Perform minor routine maintenance on bakery machinery as needed and report any faults or issues promptly.
  • Ensure all tools, utensils, and cleaning equipment are returned to designated storage areas after use.

Work Experience and qualifications requirements

  • While we prefer applicants with at least three years of baking experience in a bakery, café, restaurant, hotel, or similar establishment, we also accept applicants with at least two years of relevant work experience as a Pastrycook, or Pastrycook’s Assistant, provided they have performed similar duties to those outlined above. Or
  • a level 4 qualification in baking and pastries

Other requirements:

  • Strong time management and ability to work without supervision
  • A high standard of hygiene and food safety awareness
  • Must be able to pass a drug test and have a clean criminal record
  • Must hold New Zealand residency or a valid NZ work visa
