Fresh Sushi Napier Limited is a specialist sushi restaurant based in Napier, Hawke's Bay, offering freshly prepared Japanese-style sushi and related dishes to dine-in and takeaway customers. To meet sustained customer demand and support our continued growth, we are seeking a skilled Cook to join our kitchen team.

The successful candidate will play a central role in the daily preparation and cooking of sushi and other menu items, ensuring consistent quality, food safety standards, and an excellent dining experience for our customers.

  •  Minimum Guaranteed Hours: Minimum 30 hours per week
  •  Location: Napier, Hawke's Bay
  •  Remuneration: $24.50 – $30.00 per hour

Main Tasks

·       Examine foodstuffs to ensure quality and freshness, with particular attention to raw fish and sushi-grade ingredients

·       Prepare and cook sushi and other Japanese-style dishes, including rice preparation, fish slicing, and roll assembly

·       Regulate temperatures of cooking equipment including grills, steamers, and rice cookers

·       Season food during cooking to achieve authentic flavour profiles

·       Portion food, arrange on plates, and add sauces, garnishes, and condiments to finished dishes

·       Store food in temperature-controlled facilities in compliance with food safety requirements

·       Prepare food to meet special dietary requirements, including gluten-free and allergen-aware options

·       Plan menus and estimate food requirements as directed

·       Train other kitchen staff and apprentices in sushi preparation techniques and food safety procedures

Applicants for this role should have:

  • Relevant work experience (at least 2 years), or certificate in cookery, or a bachelor’s degree in any field
  •  Ability to work efficiently in a fast-paced kitchen environment
