Reason for employment
The deli and bakery functions are fresh-food departments requiring daily specialist oversight of production planning, food safety, temperature control, freshness, waste, staff allocation, presentation and customer service. The business therefore requires one dedicated Deli and Bakery Manager to take end-to-end responsibility for these departments
rather than dispersing accountability among general duty staff.
The role supports the business plan's objective of maintaining a constant daily focus on quality and freshness across fresh departments, improving product presentation, implementing standard procedures, monitoring departmental gross profit, training department staff and ensuring compliance with food-safety and audit standards.
Principal duties and responsibilities
• Plan, organise and manage the daily operations of the deli and bakery areas, including production, preparation, display, service and closing routines.
• Prepare departmental rosters, allocate duties and supervise, coach and train deli staff and bakery support employees.
• Set daily production and preparation quantities using sales patterns, promotions, seasonal demand, available stock and waste information.
• Ensure food is prepared, handled, stored, labelled and displayed in accordance with food-control, allergen, hygiene, temperature and traceability requirements.
• Monitor cooking, chilling, hot-holding, cold-holding and display temperatures and ensure required records and corrective actions are completed.
• Maintain high standards of freshness, presentation, portion control, recipe consistency and customer service.
• Order ingredients, packaging and finished goods; monitor stock levels; rotate stock; check deliveries; and address shortages, quality issues and supplier discrepancies.
• Manage waste, markdowns, yield, shrinkage and gross margin and prepare or review departmental performance information.
• Develop and maintain cleaning schedules, sanitation procedures, equipment checks and preventive maintenance reporting.
• Plan promotional displays, seasonal products, meal solutions and local customer offerings in coordination with store management and merchandising plans.
• Ensure product labels, ingredients, allergens, prices, dates and promotional information are accurate.
• Respond to customer enquiries, special orders, complaints and quality concerns and take appropriate corrective action.
• Conduct or support induction, food-safety training, safe-equipment training and performance feedback for department employees.
• Coordinate with the Office Manager on payroll and records, with Duty Managers on shift coverage, and with grocery and produce teams on stock and promotional activity.
• Complete departmental handovers, incident reports, audit documentation and regular reports to the Store Manager.
• Undertake hands-on deli and bakery work when operationally necessary while retaining overall managerial accountability.
Minimum skills, qualifications and experience
• A New Zealand Diploma at Level 5 or above; OR at least two years of relevant work experience in a similar industry.
• Practical knowledge of food safety, hygiene, allergen controls, temperature monitoring, stock rotation and cleaning systems.
• Demonstrated ability to supervise staff, plan production, control waste and maintain product presentation and customer-service standards.
• Sound numeracy and the ability to interpret sales, margin, stock and waste information.
• Ability to work early mornings, weekends and public holidays as required by supermarket fresh-food operations.
• Any food-safety training or certification required by the employer's food-control plan must be completed and kept current.
How the role fits within the organisation
The Deli and Bakery Manager reports to the Store Manager, manages the deli team and bakery support function, and works alongside the Duty Managers and Office Manager. The position owns fresh-food department performance while coordinating with the wider store on staffing, payroll records, promotions, ordering, customer service and compliance.
