About the role
We are seeking an experienced and hardworking INDIAN CURRY & TANDOORI CHEF to join our busy restaurant in Rotorua. The successful applicant will have strong knowledge of traditional Indian cuisine and proven experience preparing authentic tandoori dishes, breads, marinades and curries.
Key responsibilities
- Prepare and cook authentic Indian tandoori dishes using a traditional clay oven.
- Prepare naan, roti, kebabs, tikka, tandoori chicken and other menu items.
- Prepare marinades, sauces, gravies, curries and spice blends.
- Monitor the quality of ingredients and finished dishes.
- Ensure food is prepared according to restaurant recipes and quality standards.
- Manage food portions and maintain consistent presentation.
- Plan and prepare food for daily service.
- Monitor stock levels and assist with ordering kitchen supplies.
- Minimise food wastage and control kitchen costs.
- Maintain a clean, safe and hygienic kitchen.
- Follow all food-safety and health-and-safety requirements.
- Assist in developing new dishes and updating the menu when required.
- Train and support junior kitchen staff.
- Work efficiently during busy service periods.
Skills and experience
The successful applicant should:
- Have at least 3 years of relevant experience as an Indian Curry and Tandoor Chef;
- Have practical experience operating a traditional tandoor oven.
- Have sound knowledge of Indian spices, marinades, curries and cooking techniques.
- Be able to prepare both vegetarian and non-vegetarian Indian dishes.
- Be able to work independently and as part of a kitchen team.
- Maintain high standards of food quality, hygiene and presentation.
- Be reliable, punctual and able to work under pressure.
- Be available to work evenings, weekends and public holidays as required.
