Jumbo Seafood is opening a new restaurant at 26 Karewa Place, Hamilton, and we’re looking for three Cooks to join our opening team. Our menu features Chinese-style seafood dishes, from steamed whole fish and garlic scallops to salt-and-pepper-style crab, seafood congee and claypot rice.

Key responsibilities

  • Check the freshness and quality of whole fish, shellfish, meat and vegetables on delivery and again before cooking. Store ingredients at the appropriate temperatures and rotate stock.

  • Clean, scale and portion whole fish, butterfly prawns, and prepare scallops and mussels for steaming, grilling or stir-frying.

  • Prepare and cook dishes from our menu, including steamed seasonal fish, scallops with garlic and vermicelli, salted egg yolk prawns, seafood congee and claypot rice.

  • Control the heat of woks, steamers and grills during service. Adjust cooking times to suit the size of each fish or batch of shellfish, and check doneness before serving.

  • Prepare stocks, sauces and seasonings for individual dishes. Taste and adjust congee, broths and wok dishes during cooking.

  • Follow dietary requests recorded on orders, check the ingredients in stocks and sauces, and adapt preparation where the kitchen can safely accommodate the request.

  • Portion and plate dishes consistently, finish each dish with the appropriate sauce or garnish, and coordinate with other cooks so dishes for the same table are served together.

  • When required, help plan seasonal seafood specials, estimate ingredient quantities and train new kitchen staff in seafood preparation and cooking techniques.

    Requirements

  • Either a relevant NZQCF Level 4 qualification or higher in cookery or a related field, or at least one year of relevant work experience as a cook or similar role.
  • Ability to assess seafood for freshness, clean and portion whole fish, and prepare prawns, scallops and mussels for cooking.
  • Good control of heat, timing and seasoning when steaming fish, stir-frying seafood and preparing dishes such as congee and claypot rice.
  • Sound knowledge of food hygiene, including safe seafood storage, stock rotation and the prevention of cross-contamination.
  • Ability to follow recipes, maintain consistent portions and check ingredients when preparing orders for customers with dietary requirements.
  • Previous experience in a Chinese seafood restaurant would be an advantage.
