Position Title: Regional Chef
Reports To: Operations Manager
Location: Multiple store locations in the Canterbury region
Number of Positions: 01
We are looking for a skilled and experienced Regional Chef with a strong specialty in sushi and Japanese cuisine to lead culinary operations across multiple store locations. Reporting to the Owner/Operations Manager, this role is responsible for planning and organizing the preparation and cooking of food in dining and catering establishments.
Key Responsibilities
1. Food Preparation & Cooking:
- Plan, organise, and oversee food preparation and cooking activities across all stores.
- Ensure recipes, presentation, and portioning meet company standards.
- Develop and test new menus and food concepts (including sushi andother specialties).
2. Quality & Food Safety:
- Manage and maintain the quality of all food products at every store.
- Monitor food safety practices, records, and compliance with statutoryhygiene regulations.
- Oversee the Safe Food Pro app, ensuring it is properly used by staffand functioning effectively.
- Inspect supplies, equipment, and work areas to ensure compliancewith established standards.
3. Operational Oversight:
- Monitor sales and profit targets for each location.
- Conduct daily checks of stock on hand and manage food supplyorders.
- Assist with rostering, payroll, and other staff-related issues as required.
4. Collaboration & Leadership:
- Discuss food quality and operational issues with other chefs andmanagers.
- Train, mentor, and support kitchen staff to uphold company standards.
- Work with the owner and management team to improve efficiency andcustomer satisfaction.
5. Skills & Attributes:
- Proven experience as a chef, preferablyin a multi-site or regional capacity.
- Strong knowledge of food safety, hygiene, and compliance requirements.
- Creative and innovative in menu development.
- Ability to manage and motivate a diverse team.
- Strong organisational and problem-solving skills.
- Understanding of food cost control and profitability targets.
Qualifications & Work Experience:
Applicants must meetoneof the following requirements:
- Work Experience: A minimum of two years of relevant chef experience,supported by documented evidence not written by the applicant (e.g.reference letters, employment records).
OR
- Qualification: A relevant qualification at Level 4 or higher on the NewZealand Qualifications and Credentials Framework (NZQCF).
