About the Role:

We are seeking a passionate and skilled Indo-Chinese Chef with expertise in Fijian-style Indo-Chinese cuisineFijian Indian curries, and a solid understanding of Kiwi cuisine. The ideal candidate will have 3–4 years of experience preparing flavorful fusion dishes that reflect both Fijian and New Zealand culinary traditions.

Key Responsibilities:

  • Prepare and present a variety of Fijian Indo-Chinese dishes, including:
    • Chilli Chicken
    • Chicken Chopsuey
    • Chicken Stir Fry
    • Fried Rice
    • Chow Mein
    • Sweet & Sour Dishes with Fijian spice blends
  • Prepare authentic Fijian Indian curries, such as:
    • Goat Curry
    • Lamb Curry
    • Chicken Curry
  • Incorporate elements of Kiwi cuisine into fusion dishes and menu planning
  • Prepare and stock items for the cold food cabinet, including:
    • Sandwiches
    • Panini
    • Croissants
    • Creative and seasonal cold food options based on customer preferences and trends
  • Maintain high standards of hygiene and food safety
  • Perform regular cleaning duties to maintain a clean and organized kitchen
  • Manage kitchen inventory and ensure the freshness of ingredients
  • Apply food costing principles to ensure profitability and portion control
  • Minimize food wastage through smart prep, storage, and rotation practices
  • Collaborate with the team to develop new menu items
  • Ensure timely preparation and delivery of orders
  • Work efficiently under pressure, especially during busy service hours
  • Work independently when required and manage busy periods confidently

Hygiene Standards:

  • Follow all food safety regulations and kitchen hygiene protocols
  • Clean and sanitize workstations, utensils, and equipment regularly
  • Practice proper personal hygiene, including clean uniforms, gloves, and hairnets
  • Monitor food storage and handling to prevent contamination
  • Maintain a clean and safe environment for staff and customers

Food Safety Tips:

  • Store raw and cooked foods separately to avoid cross-contamination
  • Keep food at safe temperatures: hot food above 60°C, cold food below 5°C
  • Wash hands thoroughly before and after handling food
  • Use separate cutting boards for meat, vegetables, and seafood
  • Label and date all stored ingredients to ensure freshness and rotation
  • Regularly check expiry dates and discard expired items
  • Ensure proper cooking temperatures for meats (e.g., chicken above 75°C)

Requirements:

  • Minimum 3 years of experience as an Indo-Chinese Chef
  • Strong knowledge of Fijian Indo-ChineseFijian Indian, and Kiwi cuisine
  • Ability to work in a fast-paced, high-pressure kitchen environment
  • Ability to work independently and manage busy periods
  • Good communication and teamwork skills
  • Culinary certification is a plus
  • Must have a valid New Zealand work visa or be a New Zealand citizen/resident
