Job Description

·         To help the Head Chef or most senior chef with the overall running of the kitchen on a day-to-day basis.

·         Prep food for service as required,

·         Plan menus with Head Chef and manager,

·         Train and supervise other junior chefs and kitchen hand,

·         Ensure the necessary stocks are on hand,

·         Cook meals to order and assist others with cooking during service,

·         Maintain Kitchen Standards with regards to hygiene, food, storage & handling procedures, as per FCP

·         Assist in ordering and receiving stock / produce,

·         Assist in stock control – rotation, wastage reduction,

·         General cleaning and maintenance of kitchen area, dishes and equipment,

·         Assist in assuring Food Control Plan documentation is kept up to date – including the daily & weekly diaries.

·         Providing direction, leadership, and instruction to other junior staff.

·         Ensure maintenance problems are promptly reported and followed up on.

·         Ensure all communication between restaurant and kitchen runs smoothly,

·         Assist in junior staff operate in full compliance with the Food Control Plan

·         If preparing or cooking food then ensure each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature,

SKILLS, EXPERIENCE & EDUCATION

• A positive and enthusiastic manner.
• Excellent skills in cookery techniques and ability to execute them under pressure.
• Ability to delegate effectively.
• Minimum  3 years’ experience in a busy environment
