Chef's Assistant ensures the kitchen is orderly and assists Cooks to prepare and arrange food. Duties include claening the kicthen area, washing dishes and utensils and ensuring that the Cook has everything required to run the kitchen efficiently.

Chef's Assistant's Job description:

·        Confirming the stock is ready to use and preparing food ingredients following given recipes;

·        Collecting utensils used in food preparation and cooking;

·        Weighing and measuring ingredients for cooking;

·        Preparing ingredients with a variety of cooking skills, such as washing, peeling, cutting, slicing and dicing, under senior kitchen staff’s supervision and direction;

·        Handling perishable ingredients (meat, poultry and seafood) such as cutting and grinding in a prescribed manner to be ready for food preparation and cooking;

·        Taking cooked food from cooking facilities and tools;

·        Cleaning equipment, floors, other kitchen tools and kitchen areas;

·        Ensuring cooking facilities and tools to be ready for preparing and cooking;

·        Cleaning utensils and kitchenware, and returning them to where they should be;

·        Informing other kitchen staffs when food and other supplies are running short;

·        Assisting senior kitchen staff in portion control, quality control, wastage management;

·        Assisting senior kitchen staff in the preparation and cooking of food;

·        Handling, sorting and distributing food items as instructed;

·        Ensuring proper use of chemical/cleaning products;

·        Following all hygiene, health and safety regulations in a kitchen;

·        Maintaining a positive and professional approach with co-workers and customers;

·        Training new staffs if required;

·        May freeze and preserve foods;

Chef's Assistant's Required Skills:

·        At least months of verifiable, relevant to work experience, or qualification at NZQF Level 1 or higher, such as the Australian Food Handling Certificate (NZQF Level 1) or micro-credentials related to the food business, such as the New Zealand Food Safety Certificate, to carry out the assigned tasks;

·        Sufficient knowledge in Japanese food and beverage culture as well as hospitality business is an asset;

·        Good command of English to carry out above duties;

·        Personal hygiene is essential;
