Job Description:
We are expanding our menu! A Cup of Rest in Ferrymead, Christchurch, is transitioning to include an authentic, premium selection of traditional Persian Kebabs and grilled dishes.
To lead this exciting transition, we are seeking a highly skilled, passionate, and experienced Specialist Persian Cuisine Chef. This is a highly specialized role, and proven experience specifically within an authentic Persian restaurant is an absolute mandatory requirement for this position.
Key Responsibilities:
- Plan, prepare, and cook high-quality, authentic Persian dishes, with a primary focus on traditional Persian Kebabs (including Koobideh, Joojeh, Barg, Chenjeh, etc.).
- Expertly manage the specialized preparation of meat, including professional meat mincing, seasoning, marinating techniques, and skewering (Kebab preparation).
- Master the traditional Persian grilling process over open flames/chargrill to ensure authentic taste and texture.
- Prepare other authentic Persian comfort foods, slow-cooked stews (Khoresh), and specialty saffron rice dishes.
- Monitor kitchen hygiene, food safety, and sanitization standards in accordance with the Food Control Plan.
- Estimate food requirements, manage stock rotation, and handle portion control.
Mandatory Requirements & Qualifications:
- Specific Experience: Minimum of 2 years of continuous, proven experience working strictly as a Chef in an authentic Persian/Iranian restaurant. Experience in general Western or generic Middle Eastern kitchens alone will not be considered sufficient.
- Specialized Skills: Deep expertise in Persian Kebab preparation (meat blending, skewering, and chargrilling) is mandatory. Complete familiarity with Persian culinary herbs, spices (Saffron, Sumac, Limoo Amani), and traditional cooking methods is required.
