The Chef de Partie is responsible for managing a designated section of the kitchen, ensuring the consistent preparation and presentation of high-quality Chinese barbecue and traditional dishes. The role involves supervising food preparation, maintaining food safety and hygiene standards, coordinating with other kitchen staff, and ensuring efficient kitchen operations during busy service periods.

Duties and Responsibilities

  • Prepare, cook and present authentic Chinese barbecue dishes, grilled meats, hot pot ingredients, and other menu items to the restaurant's quality standards.
  • Take responsibility for a designated kitchen section, ensuring smooth and efficient food preparation and service.
  • Prepare and portion meats, seafood, vegetables, sauces, marinades and seasonings according to established recipes and specifications.
  • Monitor food quality, taste, texture, temperature and presentation before dishes are served to customers.
  • Coordinate food preparation with other kitchen sections to ensure timely service during peak trading periods.
  • Supervise and provide guidance to Commis Chefs, Kitchen Hands and junior kitchen staff within the assigned section.
  • Ensure ingredients are properly stored, labelled and rotated in accordance with food safety and stock control procedures.
  • Monitor stock levels and assist with ordering ingredients and kitchen supplies to minimise shortages and reduce waste.
  • Inspect the quality and freshness of food deliveries before acceptance and storage.
  • Maintain strict compliance with food safety, sanitation and hygiene regulations, including cleaning and sanitising kitchen equipment and workstations.
  • Operate and maintain kitchen equipment, charcoal grills and cooking appliances safely and efficiently.
  • Assist the Head Chef in developing new menu items, improving recipes and introducing seasonal or promotional dishes.
  • Control food costs by maintaining portion consistency, reducing wastage and maximising ingredient utilisation.
  • Assist in training new kitchen staff on cooking techniques, food preparation procedures, workplace safety and restaurant standards.
  • Work collaboratively with the Head Chef and kitchen team to maintain efficient workflow and deliver high-quality dining experiences for customers.
