We are looking for TWO permanent Curry & Tandoor Chef de Parties to be part of our team.
CDP will independently manage and run the Indian curry and tandoor section of our professional kitchen. You will ensure consistent execution of high-quality dishes while supervising junior kitchen staff.
Core Duties & Responsibilities
• Oversee and coordinate the daily operations of the Curry and Tandoor station under the direction of the Head Chef or the owner.
• Supervise, mentor, and guide junior cooks and kitchenhands.
• Marinate, season, prepare and garnish authentic Indian curries and tandoori specialties according to standard recipes, maintaining flawless presentation.
• Expertly operate and manage the traditional Tandoor oven, ensuring proper temperature control and precision cooking of meats and breads.
• Manage station inventory, monitor stock and supply levels, and implement portion controls to minimize food wastage while advising on ordering requirements.
• Ensure strict compliance with corporate and statutory food hygiene, safety standards, and refrigeration/storage regulations within your station.
• Ensure the quality of the foodstuffs.
• Provide inputs to the chef in planning menu, bulk menu or catering orders, if required.
