Key Responsibilities:
- · Prepare, season, cook and present a variety of dishes, including kebabs, grilled meats, chicken, lamb, fish, vegetables, rice dishes, sauces, soups and side items.
- · Prepare kebab menu items such as marinated meats, doner-style fillings, wraps, salads, sauces and garnishes while maintaining consistent taste, portion size and presentation.
- · Operate grills, hot plates, ovens, fryers, microwaves, tandoor and other kitchen equipment safely and efficiently.
- · Prepare grilled dishes by marinating, skewering, seasoning and cooking meats and vegetables to the required standard.
- · Prepare tandoori items such as tandoori meats, kebabs, breads and related accompaniments, ensuring correct cooking temperature, texture and flavour.
- · Prepare Nepalese-style curries, including meat, chicken, vegetable and lentil-based dishes, using appropriate spices, pastes, gravies and traditional cooking methods.
- · Prepare curry bases, chutneys, pickles, sauces and spice mixes in advance to support smooth daily service.
- · Check ingredients and finished dishes for freshness, quality, flavour, appearance and consistency before service.
- · Portion food, plate dishes, add sauces, gravies and garnishes, and ensure each order is served attractively and correctly.
- · Store food safely in temperature-controlled areas, monitor use-by dates, rotate stock and reduce food wastage.
- · Assist with catering orders, including planning quantities, preparing bulk dishes, packing food safely and ensuring orders are ready on time.
- · Follow customer dietary instructions where required, including mild, medium or hot spice levels and other reasonable food preferences.
- · Maintain a clean and organised kitchen, including benches, utensils, cooking equipment, storage areas and food preparation spaces.
- · Follow all food safety, hygiene, health and workplace safety procedures, including safe handling of raw meats, cooked foods and allergens.
- · Help plan menus, estimate food requirements, receive deliveries, check stock levels and report shortages to management.
- · Support, guide and train kitchen assistants or junior staff when required.
- · Carry out any other reasonable kitchen-related duties needed for the smooth running of the business.
Requirements:
- · At least 2 years of relevant cookery experience, or a relevant cookery or hospitality qualification.
- · Experience preparing kebab, grill, tandoori or curry dishes is preferred.
- · Good knowledge of food preparation, seasoning, portioning, presentation and safe food storage.
- · Ability to regulate and safely use grills, ovens, fryers, tandoor and other commercial kitchen equipment.
- · Strong understanding of food hygiene, temperature control, cleaning and safe handling practices.
- · Ability to work in a fast-paced kitchen while maintaining quality and consistency.
- · Willingness to work Tuesday to Sunday, including weekends, public holidays and the busy September to January period.
- · Physically fit and able to stand for long periods during service.
- · Reliable, honest and able to work well as part of a team.
- · Good communication skills and attention to detail.
- · Clean criminal history and ability to pass any pre-employment checks if required.
