About the Role

We are seeking passionate and skilled Chefs appreciates Japanese cuisine, is committed to excellence, and can contribute to the continued success and development of our menu.

As a Chef, you will be responsible for supporting the efficient day-to-day operation of the kitchen and ensuring the consistent preparation and presentation of high-quality Japanese dishes. The role involves food preparation, cooking, menu development, stock management, kitchen supervision, and maintaining high standards of food safety and hygiene.

You will also work closely with the management team and lead and support kitchen staff to ensure the kitchen operates efficiently and consistently, particularly during busy trading periods.

Key Responsibilities

  • Prepare and cook a range of Japanese and modern Japanese-inspired dishes in accordance with established recipes and quality standards.
  • Evaluate and enhance existing menu items and contribute to the development of signature Japanese dishes that reflect the business's culinary identity.
  • Use appropriate Japanese cooking techniques and fresh, quality ingredients to prepare and present traditional and modern dishes.
  • Develop seasonal specials and new recipes that reflect customer preferences and current dining trends while maintaining the authenticity and quality of Japanese cuisine.
  • Ensure every dish consistently meets high standards of taste, aroma, portion size, quality, and presentation.
  • Lead, train, and support kitchen staff in Japanese food preparation, including sushi preparation, tempura, grilling, frying, and broth-based cooking.
  • Ensure food preparation and cooking processes are carried out efficiently and consistently, particularly during peak trading periods.
  • Monitor food quality and ensure all ingredients are fresh, properly stored, and handled in accordance with food safety requirements.
  • Assist with ordering, receiving, inventory, and stock control of Japanese ingredients, seafood, sauces, spices, specialty produce, and other kitchen supplies.
  • Monitor stock levels, minimise food waste, and assist with controlling food costs.
  • Maintain a clean, organised, and efficient kitchen at all times.
  • Ensure compliance with all relevant food safety, health, safety, hygiene, and workplace requirements.
  • Work closely with the CafĂ© Manager and management team to ensure menu offerings, food quality, and kitchen operations align with the business's standards and customer expectations.
  • Assist with kitchen planning and preparation to ensure adequate food availability throughout trading hours.
  • Contribute to maintaining a positive, professional, and cooperative working environment within the kitchen team.
  • Assist with resolving operational issues and maintaining smooth kitchen operations during busy service periods.

Job Requirements

To be successful in this role, you will ideally possess the following qualifications, experience, and attributes:

  • A relevant vocational qualification in culinary arts, commercial cookery, or a related field, or a minimum of two years' relevant work experience.
  • Experience specialising in Japanese or Asian cuisine is preferred.
  • Strong knowledge of food safety, hygiene, and kitchen health and safety requirements.
  • A creative mindset with a passion for cradting exceptional dished that leave a lasting impression.
  • Strong organisational and time management skills, with the ability to work efficiently under pressure.
  • Excellent communication and teamwork skills.
  • Flexibility to work weekends, public holidays, and variable shifts, as the store operates seven days a week.
  • Ability to work effectively in a busy airport environment and comply with applicable Auckland International Airport operational and security requirements.
